Kale/Greens Soup
4 c potatoes, peeled and diced 1½ c medium onion, diced 1 c plus 2 c water 2 c chopped kale or other greens 1 tsp salt ¼ tsp celery seed ½ tsp celery salt a pinch garlic powder 1½ tsp chicken-style seasoning
Put potatoes, onion, and one cup water in a two-quart saucepan. Cook covered over medium heat until vegetables are soft, about 20 minutes. Add kale or other greens to potatoes and cook five minutes, until the greens are wilted. Add the remaining ingredients, including additional 2 cups of water, and cook for an additional 15 minutes. |
