Royal Cran-Apple Mold

1 c raw ground cranberries

1 c grated, unpeeled apples

1 c diced pineapple, drained or fresh honey to taste for sweetness

½ c broken nuts (pecans or walnuts)

½ c seeded grape halves, red or green

1 tbsp agar

½ c cold and

½ c hot water

1 c pineapple juice

Combine first four ingredients and let sit. In saucepan dissolve the agar in the cold water, then add the hot water and boil for two minutes. Add the pineapple juice and chill slightly.

Add the cranberry mixture, grapes, and nuts.

Pour into mold and chill to set. Serve with soy whipped cream, if desired.

For a salad rather than mold, combine first six ingredients only.
