Carrot Pie*

1½ c soymilk

2 c cooked carrots

3 tbsp soy or oat flour

2 tbsp honey

½ tsp vanilla

2½ tbsp starch

½ tsp salt

 

Whirl all ingredients in blender. Pour into baked whole-grain pie crust.

Bake at 350 degrees for 1 hour. Cool and serve.
